Short description:

During this course the students will acquire knowledge on the mechanism of lipid oxidation, free radicals and their precursors, methods of investigation of peroxidation processes, classes of substances preventing and retarding autoxidation. The students will also get the opportunity to study research literature on autoxidation chemistry

Full description:

Principles of free radical processes. Formation and detection of free radicals, their stability and reactivity. Kinetics of radical mediated processes. Chain reactions. Radicals and quasi-radicals containing oxygen. Basic lipid chemistry - role of lipids, their classification and sensitivity toward hydrogen atom abstraction processes. Structure of cell membranes and oxidative damage of lipids/phospholipid bilayers. Kinetics of autoxidation - rates of mono and polyunsaturated fatty acid oxidation. Photooxidation and enzymatic autoxidation. Preventive antioxidants - enzymes, complexing agents, singlet oxygen quenchers. Chain-breaking antioxidants and retarders. Ascorbic acid, carotenoids, tocopherols, flavonoids. Synergism in antioxidant action. Tocopherol mediated peroxidation
